Did you know that 40 per cent of fruits and vegetables grown in Australia never make it on to the produce shelf, and on top of that, one fifth of the food we buy gets thrown in a bin?

Open Table, a Melbourne-based not-for-profit, prides itself on turning seasonal gluts or leftover vegetables into nutritious, long‑lasting preserves.

At a No-Waste Pickling and Fermenting workshop participants will learn the fundamentals of safe fermenting, taste sauerkraut and take home their own jar of pickles.

The workshop will also provide participants with thriftily, practical skills they can immediately put into practice at home. It will highlight how everyday actions like eating more vegetables and reducing food waste can lower the risk of diet‑related chronic diseases while also delivering benefits for climate and household budgets.

Residents are encouraged to sign up as places are limited. The workshop will be held at St Mary’s School, 20-28 Chauncey Street, Lancefield, on Saturday, March 28, from 10am to 11.30am.
